Harissa, feta and tapenade pizza

I’m having a bit of a moment with these kind of flavours at the minute and harissa and feta in particular seem to be creeping into more and more of my meals. I just really love this combo and I think it works really well on a pizza for a quick lunch. The pizza base is a little unconventional and is not the usual sort of texture, but for a quick simple meal I think it does the job perfectly!

Ingredients (serves 1)

For the base:

1/4 cup gluten free flour

1/4 cup milk (i used soya)

1 egg yolk

1/4 tsp baking powder

pinch salt

For the toppings:

2 tbsp canned tomato

1/2 or 1 tbsp harissa depending on spice level

small handful baby leaf spinach

1 tbsp feta

1 tbsp tapenade
